Review:
This coffee has notes of chocolate, tangerine, berries and a little biscuit-like touch running in the background. The tasting notes are strawberry-blackberry compote, lemon meringue pie as mentioned by the roaster. This can be called a bright coffee with a bitter balance, one of the first of it’s kind. The coffee starts strong, runs sweet in the middle and ends with a dry finish. Overall, a great coffee to experiment with but requires delicate methods of brewing to get the complexity it packs.

252 ml water @85°C
Pour 40 ml water slowly
Bloom for 45 seconds
Pour till the 150 ml mark
Swirl like a wine glass. Do not stir.
Pour remaining water till you hit the 252 ml mark
Swirl gently
Let it drip
Target brew time of 3 min 15 seconds
Let the brew cool for 45 seconds
